Ingredients

  • 2 large eggs
  • 2 slices of wholemeal bread
  • 50g fresh spinach
  • 50g cherry tomatoes, halved
  • 30ml milk (optional, for creaminess)
  • 1 tsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a non-stick pan over medium heat. Add cherry tomatoes and cook for 2-3 minutes until they soften.
  2. Add the spinach and cook for another 1-2 minutes until wilted. Remove vegetables from the pan and set aside.
  3. While the vegetables cook, toast the wholemeal bread.
  4. In a small bowl, whisk the eggs with milk (if using), salt, and pepper.
  5. Reduce pan heat to low, pour in the eggs, and stir gently with a spatula until cooked to your liking.
  6. Place the scrambled eggs on top of your toast and finish with the sautéed vegetables.
